Snuggled on a hilltop between vineyards, Pyrgos is one of Santorini’s most atmospheric villages – think whitewashed houses, tiny blue-domed churches and a Venetian castle crowning the skyline. Carpe Diem sits just outside the village with sweeping views over both coasts, so you can watch the island change colour from dawn to after-dark.
Wander 700m down to wine bars and tavernas in Pyrgos’ cobbled lanes, or hop in a taxi to Kamari’s volcanic black-sand beach for a dip in the Aegean. You’re central enough to explore Oia and Fira with ease, then retreat back to serene Pyrgos when the island gets busy.

The hotel’s central outdoor freshwater infinity pool is all about the view: a serene, cliff-edge-style basin with a dedicated sunbathing terrace and chic sunbeds looking out over Santorini’s patchwork of vineyards and villages. Pool towels are complimentary, so you can travel light.
Every suite then adds its own water sanctuary – from private heated plunge pools to outdoor whirlpools with panoramic island vistas – creating a resort-wide feeling of semi-private villa living.
Carpe Diem doesn’t sit directly on the coast, but you’re just a short drive from Santorini’s signature volcanic beaches – from buzzy Kamari Beach to dramatic black-and-red sands further along the shore – all easily reached by taxi or hire car.

Wellness here is intimate and highly tailored. Althea Wellness & Fitness is a boutique spa conceived for two, complete with sauna, couples’ massage cabins and a menu of rejuvenating rituals and beauty therapies (local charges apply; hours may vary by occupancy).
A compact, air-conditioned gym offers cardio equipment, free weights and a small sauna area, typically open from May to October between 10:00 and 18:00. It’s ideal for an energising session before a slow breakfast back on your terrace.

Exaltis Restaurant forms the culinary heart of Carpe Diem Santorini. This elegant poolside venue serves creative Greek and local cuisine from breakfast through to dinner, using island produce and Santorini’s celebrated wines.
Wake up to leisurely à la carte breakfasts on your terrace or by the pool, then return for light snacks, Greek meze and fresh salads during the day. After dark, Exaltis transforms into a fine-dining spot with degustation menus that reimagine local flavours in a dramatic hilltop setting.
The Exaltis Restaurant and Bar doubles as a stylish pool bar from midday until late, pouring local, international and premium drinks along with signature cocktails – ideal for toasting those golden Santorini sunsets from your lounger.
